It may seem that any slightly exotic ingredient counts as a superfood these days, but one of the health food scene’s perennial favourites, seaweed, is far from being just a novelty. Teaming with antioxidants, minerals including calcium, iodine, magnesium and potassium, as well as vitamins A, B, C, E and K, seaweed is a power-packed source of essential nutrients that’s also low in fat. Because of its rich nature, seaweed is not only considered great for improving thyroid function, but also in aiding digestion, countering diabetes and boosting heart health as well. Edible seaweed typically comes in three varieties – brown, red and green. Sprinkle over salads, soak it in a noodle soup or pop it in capsule form to get your daily dose.
